Stellum Spirits, a new national brand created to celebrate the modern-day whiskey drinker, today officially launched its inaugural flagship offerings, including bourbon (blue label), rye (green label), and single barrels, which are all bottled at cask strength. By embracing the vitality of American whiskey today, Stellum is focused on creating the next generation of classic whiskeys that include all facets of the American story in its vision.

Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.

TASTING NOTES
Appearance: Amber gold.
Nose: Intense clove and allspice immediately jump out of the glass, supported by creamy macadamia nuts and light tobacco. As the whiskey opens up, sweet aromas of honeysuckle, green apple, and nectarine begin to show, rounded off by toasted rye and oak.
Palate: The tip of your tongue is met with a hint of vanilla, marshmallow, and cotton candy. The whiskey quickly transforms as it spreads across your tongue, revealing spicy notes of black pepper, cayenne pepper, and cinnamon baked apples. The spice is supported by tart underripe blackberry and apricot that contrasts perfectly against the initial sweetness.
Finish: The spiciness of the palate carries over into the finish with candied ginger and more black pepper before slowly fading into a syrupy sweet honey.

With the Addition of Water: The strong pepper notes are more subdued, allowing for sweet cinnamon streusel and stewed apples to come to the forefront of the palate.

What Gary Says

Nose:  Caramel, oak, orange zest, vitamins, cinnamon and clove.
Palate:  Rich mouthfeel, vanilla, bit of milk chocolate, baking spices including clove, nutmeg and cinnamon followed by cracked black pepper and tart berries.
Finish:  Moderately long and drying with berries and pepper with honey.
Comments:  Wow! The nose on this was nice, but was a bit deceptive in that I wasn’t expecting the intensity and richness that the palate delivered. Having tried several products from the folks at Barrell Craft Spirits who are behind Stellum Spirits, I shouldn’t have been surprised. The Dickel notes are present but not prominent on the nose, and I found the palate on this to be comparable to some of their Barrell Bourbon releases. A bit of water brings out some caramel corn on the nose, and tamps the edges of the palate – although it doesn’t need water in my opinion. Given the trend in prices of premium brands and labels in recent years, I found this priced incredibly reasonably. I hope that they’re able to keep this profile fairly consistent – although if so they’ll probably struggle to keep up with demand!

Made from just two parcels of whisky, which we are unlikely to source again at these ages, Tobias & the Angel is a culmination of two decades of whiskymaking.

We have a long-held reverence for the whiskies of the Clynelish and Caol Ila Distilleries. Ever since Eleuthera, which we created in 2002, we have understood that these two distillery whiskies complement each other exquisitely.

For the label artwork, so great is our esteem for the whiskies in this blend that we looked to Renaissance painting for inspiration.

We’ve chosen TOBIAS & THE ANGEL , a beautiful painting produced at Andrea del Verrocchio’s studio in Florence during the 15th century. As was common at the time, however, TOBIAS & THE ANGEL showcases the talents of several artists. For example, the little dog with its graceful and minutely-observed curls of hair, and the gleaming fish carried by Tobias, were both painted by a young Leonardo da Vinci.

We love the symbolism of the naïve boy and the divine angel. To us this represents the relationship between aromatic smoke, a hallmark of Caol Ila Distillery, and the ethereal fruitiness and complexity of Clynelish.

TOBIAS & THE ANGEL is our latest study of these two unique flavour profiles, and the effects of their combination. Due to the age of the single malts involved, it is also our rarest and most precious. We hope that those able to acquire a bottle might share its contents with other whisky lovers; the Angel to their Tobias.

FLAVOUR DESCRIPTORS: Distant bonfires underlay ethereal herbal and fruit characters, the result of extended maturation.

DISTILLERY SOURCING: A heavenly partnership of Clynelish Distillery and Caol Ila Distillery.

RECOMMENDATIONS: We believe this whisky will be best appreciated sipped at bottling strength. However, you may enjoy it any way you like.

What Gary Says

Nose:  Rich, smoky earthiness, herbal with fennel and lemongrass while sweet with vanilla, apricots, mangoes, and faint chocolate.
Palate:  Creamy mouthfeel, fruit salad with peaches, stewed pears and cherries all drizzled lightly in caramel, earthy notes with pepper spice, nutmeg, cinnamon, a bit of a vegetal note, peat smoke and a bit of toffee.
Finish:  Long with peat smoke and toasted marshmallow lingering.
Comments: This is a deliciously complex dram – one I want to savor and pick apart every sniff or sip as it seems to keep showing me something new.  A bit of water amps up the fruit notes on the nose, and does the same on the palate while tamping the earthiness, and giving it a bit of waxiness.  I had the absolute pleasure of sampling this over the course of a couple of weeks, and doing so in a side-by-side setting with the preceding blends Eleuthera and The Lost Blend which I was fortunate enough to have bottles of.  That was a lot of fun to experience the progression moving from Eleuthera, which is a fine dram in its own right, to The Lost Blend – where it is quite similar but more rich and complex, to this which was more than a bit more complex.  This is comprised of parcels from Clynelish (24 yrs old) and Caol Ila (34 yrs old) in 51% to 49% ratios respectively.  If those ages are accurate, it is interesting that the older malt flipped here – as Eleuthera’s components were 15 yr Clynelish with 12 yr old Caol Ila.  For a whisk(e)y geek, I would absolutely encourage you to try to find an opportunity to try this – but the price is such that I couldn’t say anyone ‘Must Buy’.  Personally I’ve never spent this much money on a bottle, but I’m incredibly thankful and fortunate that Richard acquired one and generously shared it.  He shared his take on bottles in these higher priced tiers – not thinking about them simply as whiskey, but as an experience.  From that perspective, if you’ve ever enjoyed a $100 (or more) meal – consider that lasts only for a few hours over one evening, whereas you could enjoy perhaps a dozen such evenings with a 2 oz pour of this gem.  Or fewer while sharing the experience with friends.  This is definitely one I’d savor for an entire evening.

This is our sixth edition of Flaming Heart, a whisky born of oak, smoke and fire.

First released in 2006, Flaming Heart was the first whisky to combine the rich, complex spice of Scotch aged in new French oak with the evocative peat-red smoke of Islay malt.

It created a genre-defying style that was smouldering, spicy, complex – and so popular that we’ve re-released it five more times in the years that followed.

In this 2018 edition, we have reintroduced a subtle sherry-cask influence that adds an additional layer of complexity and richness. A medium smoky-peaty base is enriched by a sweet maltiness and notes of baking spices and dried fruit.

It’s a whisky to enjoy late into the night, perfect served neat or paired with rich cheeses.

What Gary Says

Nose:  Smoke and peat with sherried fruit nuts under a fog of sea air, smoked meats and a touch of iodine.
Palate:  Thick and creamy mouthfeel with peat smoke, stewed fruits – berries, plums, peaches – exotic spice notes with honey and a hint of anise along with a touch of sea salt.
Finish:  Long and smokey with an ashy earthiness and hints of fruit.
Comments:  Flaming Heart is one of my favorite offerings from Compass Box, and probably the brand I’ve bought more bottles of than anything else in terms of Scotch whisky. When I first discovered it in 2015 (although ironically finding a 2012 release!), I bought it based solely on a review I read (this one!) and my experienced lined up with Richard’s.  I probably picked up a half-dozen bottles of the 2015 release over the course of 2 years (never bought more than 1 at a time!), so I did compared my sample of this 2018 edition (thanks Rich!) to that.  Very similar for sure – this has maybe a touch more ash/smoke, and the 2015 has maybe a touch more fruit.  When I did a blind side-by-side, I wasn’t sure I could tell any difference.  If you like smokey, peaty whisky that has a nice balance of fruit and spice – I can’t see how this would disappoint.

Barrell Seagrass is an ode to coastal memories, blended to evoke the joy of a day on the beach and an evening listening to the soothing rhythm of waves. Hot sun, brisk air, dry sand, and oceanside vegetation are brought to mind. A ripe and inviting tropical nose and grassy, bright body evolve to a finish as long as the view down the shore on a clear day.

Seagrass highlights the grassy oceanside notes we love in rye and the opulence and spice of finishing barrels. It is a blend of American and Canadian rye whiskeys, with each ingredient meticulously sourced and finished separately in Martinique Rhum Agricole casks, apricot brandy casks, and Madeira barrels.

Each component whiskey brings its own attributes to Seagrass, revealing unique layers of flavor from start to finish. In classic Barrell Craft Spirits fashion, Seagrass is a true original, with its own unique personality in the BCS Portfolio and the whiskey landscape at large.

FLAVOR NOTES

A basket brimming with tropical and orchard fruits lies at the heart of this juicy whiskey, with prominent tones of ripe apricot from the brandy casks. The tropical notes are kept in check by a broad array of spicy and herbaceous rye aromas and complemented by the delicate florals of grassy, Martinique rhum. With a splash of water, the oxidized Madeira notes emerge, candying the fruit and bringing out an earthiness on the palate.

Neat
Appearance: A pale tawny with straw highlights.
Nose: High concentrations of bright, fruity esters lend a perfume-like character to the aroma. Honeydew melon and plum sit alongside a slice of ripe apricot resting out in the sun. The underlying rye is revealed by a sea-like salinity, tarragon, and elderflower.
Palate: Sweet and juicy, Seagrass opens on pear, lychee, and white grapefruit. Classic rye flavors of cinnamon, rosemary, fennel seed, and rosehip aren’t far behind. Unctuous texture and sandy tannin are complemented by a delicate astringency so common to Canadian whiskeys.
Finish: Fresh and clean, but the persistent tannin and astringency focus the powerful burst of camphor, chalk dust, and scorched earth.

With a few drops of spring water

Despite bright notes of passionfruit and geranium, the nose settles down considerably. The fresh notes are now candied — papaya, orange peel, and ginger. Liege waffle and beef tallow lay a rich foundation. The palate grows creamier, displaying french vanilla ice cream, pawpaw, and orris root.

What Gary Says

Nose: Bright and fruity, with poached pears, melon, a soft citrus note, gentle rye spice, honeysuckle and fennel, with a hint of cedar.
Palate: Sweet with tropical fruit notes of kiwi and grapefruit, vanilla, cinnamon, savory spice notes with pepper.
Finish: Moderately long, drying with herbal earthy notes.
Comments: Really interesting rye, with tropical notes along with that cedar note I get in a lot of Canadian rye. Non-age stated, but I asked and they shared that the barrels used range in age from 5 to 12 yrs old, and the various finish durations ranged from 3 weeks to about 6 months. I’m a fan of finished whisk(e)y, and appreciate the uniqueness going on in this dram, which floats between sweet and savory nicely. If you don’t like finished rye, this might not be up your alley – although I would still try it if you have a chance.

What Gary Says

Nose:  Caramel corn, charred oak, coffee cake with vanilla icing and a hint of anise.
Palate:  Caramel with chocolate, cinnamon, anise, vanilla, honey, nutty notes of almonds and hazelnuts.
Finish:  Bit short with slightly burned snickerdoodles and oak.
Comments:  Not old or complex, which isn’t what you’d expect on a 5 yr old near-barrel proof bourbon, but a solid high proof wheater. I tried this side by side against a recent Maker’s Mark Cask Strength, and by comparison this was similar with a bit more corn and a bit less spice. Takes water really well, with more chocolate coming in. If not for the short finish, this would be a solid ‘Must Try’. As a single barrel product, I’d expect some variability, but priced fair enough that taking a flyer is probably worth it.
