What the Producer Says

OUR PROCESS
We start by sourcing the best aged whiskey we can find, but the real magic is in our barrels. We use only brand new, 53-gallon white oak barrels that are carefully toasted and very lightly charred. Each one is designed from the ground up to deliver a specific flavor profile.

We work closely with our cooperage to tweak every parameter of the barrel – from the seasoning to the charring to the development of our custom toast profiles. All of our barrels are unique and proprietary to our company, giving Buzzard’s Roost a truly one-of-a kind flavor. After resting only a few weeks in our new barrels, the whiskey is purposefully transformed and ready for bottling.

About: Buzzard’s Roost is excited to announce the latest addition to their bourbon collection. Created from a blend of 4- and 5-year-old double-barreled bourbons, Toasted American Oak Bourbon is made from a blend of two mash bills.

The color is a vibrant mixture of bronze and apricot. With elegant and enticing tasting notes, this bourbon is best enjoyed on its own or in a classic whiskey cocktail.

To the nose, Toasted American Oak Bourbon lends itself to caramel, coconut, and vanilla notes met with delicate candy aromas. The palate moves from the sweet notes from the toasted oak barrel finish, and notes of confectionary and baking spice flavors shine through along with hints of candied goodness found on the nose. The finish carries notes of butterscotch, toasted oak, vanilla wafer, and coconut.

• Nose: Aromas of caramel, coconut, and intense vanilla dominate, and a re coupled with sweet candy and floral notes.
• Palate: The palate moves from the sweet notes created by the toasted oak barrel finish toward baking spice flavors, accompanied by the pleasant candy notes found on the nose.
• Finish: The finish is a delight, with notes of butterscotch, toasted oak, vanilla wafer, and coconut.

What Gary Says

Nose:  Caramel, vanilla, butterscotch, toasted oak, crème brûlée and dried coconut.
Palate:  Dark caramel, cinnamon, honey, pepper, oak and a hint of butterscotch.
Finish:  Moderate in length, drying with oak, vanilla and pepper.
Comments:  A very nice bourbon that takes water well. This is the first Buzzard’s Roost whiskey I’ve tried, but I’m encouraged by the quality and use of 53 gallon barrels. That said, the price point doesn’t seem reasonable when compared to a lower price point on a competitive (and while not age stated, certainly older) product. Age isn’t everything, but when aged properly it does increase the complexity on both the nose and palate, and while this is an enjoyable dram – it comes across as under 6 years old.

TASTING NOTES
The sherry casks deliver warm, inviting dried fruit and spice notes, adding richness to a toasted vanilla base; smooth at first with a satisfying warmth on the finish.

What Gary Says

Nose:  Malty grain, honey, porridge, vanilla, dried fruit, hint of caramel, grassy and a bit vegetive.
Palate:  Thick mouthfeel with vanilla, fruit notes, grainy barley malt, honey, dash of pepper, touch of cinnamon and nutmeg.
Finish:  Short to moderate in length, honey with malted grain.
Comments:  Nice mouthfeel, and quite easy to drink. It tastes young on the young side to me, with the PX sherry influence being there, but mild. Single barrel product brands have a challenge of wanting to deliver consistency (while acknowledging that single barrel carries with it some uniqueness; arguably that’s the point!) I asked if Limavady would share any details on the age (are they targeting a particular flavor profile, and keeping the age to a narrow range, etc). Appreciate their providing the following details in response:

“Limavady sources all barrels from Kelvin Cooperage in Kentucky and focuses on getting first fill bourbon casks exclusively. Darryl only uses them once for each barrel – because he really loves the spicy/vanilla flavor profile that is imparted from that initial aging. He is constantly tasting and going back to the liquid, but on average for 4 – 4.5 years minimum for every barrel. From there, its then finished in PX Sherry Buttes for roughly 3-6 months leaving us with a rich burst of fruitiness and sweetness.”

Contrasted with some other Irish whiskies which might mature rather than finish in Sherry, this has a more subtle fruitiness. The bottle is hefty and interesting, although I found the glass topper to be so tight that it was difficult to remove. This takes water well, and retains the nice mouthfeel. While not overly complex (and you wouldn’t expect it to be given the age details provided), it is a really nice sipper.

Dovetail took almost a year to get right, from blending to labeling, all coming together in a seemingly perfect point. We have produced limited releases of Dovetail using the same ingredients and process. With each bottling, there are proof variations.

Dovetail is blended to highlight some of our favorite flavors. Woody bourbon; terroir driven Dunn Cabernet; toasted French oak; Late Bottled Vintage Port pipes; black strap molasses casks; all working in tandem to create a buttery and deep whiskey as unique as it is delicious.

FLAVOR NOTES
Neat
Appearance: Rose gold with highlights of worn copper.
Nose: Opens with mature aromas both sweet (canelé, panna cotta, crème de noyaux) and savory (walnut oil, leather). This is followed quickly by a vast array of fruit derived both from the spirit (smoked apricot, grapefruit peel) as well as the cask treatment (sloe gin, damson jam). The aroma is high toned, pungently floral and herbaceous, with subtle, balancing pops of minerality.
Palate: Darker (cocoa, molasses, burnt marshmallow) and spicier (cola, nutmeg, Tellicherry peppercorn) than the nose, an effect well-complemented by the cask treatment and rendered more complex by the savory and herbaceous themes running throughout.
Finish: A sweet and elegant signature of rose jelly, chestnut honey, and Pineau des Charentes that also features hazelnut, eucalyptus, and Corsican mint.
With a few drops of spring water
An unexpected avalanche of orange and tropical notes of watermelon, lychee and vanilla on the nose.

What Gary Says

Nose:  Vanilla, tropical fruit notes of pineapple and grapefruit, sponge cake, savory spice, floral, nutty with subtle exotic wood (mahogany?) notes.
Palate:  Thick mouthfeel with cocoa, caramel, molasses, pepper spice kicks in with cinnamon, savory spices with tarragon and an acidic citrus note.
Finish:  Moderately long with honey, chocolate, hazelnut and mint.
Comments:  I hadn’t tried this before, and had NO idea what I was missing. Deceptive nose with more tropical and citrus fruit notes, while the palate shifts gears and reminds me of a spicy SNICKERS® bar. I like (good) surprises, and when a nose and palate feel different, provided both are good, that’s not a bug but a feature – and one that is tricky to pull off. Bit of water brings out the fruit more, while retaining that lovely thick mouthfeel.

What the Distillery Says:

This batch is named in honor of the lumberyard that Booker Noe worked at during his pre-distillery years. While his journey to becoming a distiller wasn’t exactly a straight path, it led him to his true passion.

After a short stint at the University of Kentucky, Booker hitch-hiked across America in hopes of joining the Air Force. After being accepted, the local police called his mom to verify his information. When Booker’s mom found out where he was, she convinced him to come home and work at the local lumberyard with Jeremiah Beam, also known as Uncle Jere. Booker was strong, over 6 feet tall and never backed away from physical labor of any kind, so he was a natural for the job. Booker gave 110 percent during his time at the lumberyard, which eventually landed him his first role working at the distillery. From then on, the rest was history.

Since that first day, Booker held just about every job at the distillery and worked his way up to Master Distiller. Booker’s esteemed distilling career wasn’t given to him, he earned it. His experience at the lumberyard shaped the solid work ethic and curiosity he is known for.

TASTING NOTES
Like all batches of Booker’s Bourbon, Booker’s “The Lumberyard Batch” was selected by 7th Generation Master Distiller Fred Noe to ensure it upholds the qualities and standards that his dad set for Booker’s Bourbon more than 30 years ago. Uncut and unfiltered, this batch has the following characteristics:

BATCH NOTES: Booker’s “The Lumberyard Batch” has a beautiful amber color and deep aroma with a hint of vanilla and oak that opens its depth. It has a balanced taste with a bit of sweetness that leads to a pleasant finish.
SIPPING SUGGESTIONS: Booker’s “The Lumberyard Batch” is best enjoyed neat, over ice or with a few drops of water.

What Gary Says

Nose:  Salted caramel, peanut brittle, oak, vanilla wafers, pecan praline, nutmeg, brown sugar with a hint of clove.
Palate:  Caramel, chocolate, vanilla bean, cinnamon, nutmeg, honey, cracked pepper and roasted peanuts.
Finish:  Moderately long with caramel, oak and trailing spice notes.
Comments:  Another classic batch of Booker’s, although I enjoyed this one just a tad more than the 2022-01 ‘Ronnie’s Batch’ release (which was the oldest since 2015, until this one). The nose on this seemed to have just a bit more complexity, with a pecan praline/brown sugar note that I really dig. These are subtle differences, but if I saw both on the shelf – I’d personally take this one (but if you prefer more cherry notes, the ‘Ronnie’s Batch’ might be the better pick). Good news is that I don’t think you’d be disappointed in either!

What the Distillery Says

This inaugural release of the Stellum Black Specialty Equinox was created using Stellum Bourbon. We slowly layered in rare sets of bourbon barrels, step by step, until the evening of the Vernal Equinox, when the blend was completed in honor of the changing seasons.

TASTING NOTES
Appearance: Golden amber.
Nose: Beautifully subdued nose gently opens up to ripe cantaloupe and the perfume of fresh cut grass. After it aerates, notes of sugar maple and toffee hit the senses with a distant kiss of wood spice and white pepper.
Palate: Dried apricot and honey immediately find their way into view. This unfolds into Saigon cinnamon and bruleed orange before slowly making its way to subtle notes of grapefruit and jasmine.
Finish: Finish is extremely long and slowly developed. The back-end jasmine blooms and bursts into rich notes of sorghum and wood tannin before finally dissipating into beautiful dark chocolate.

WITH 3 DROPS OF WATER: The water brings about the riper, more fruit forward qualities of the whiskey and really highlights the floral aspects that were merely an undertone before. And moves the heat from the alcohol from the back of the tongue to the cheekbones.

What Gary Says

Nose:  Rich, dark chocolate, musty oak, toffee, subtle vanilla, hint of coffee and spices.
Palate:  Viscous mouthfeel with caramel, toasted orange zest, honey, cinnamon and grapefruit.
Finish:  Long, warm and slowly drying with oak, citrus spice and dark chocolate.
Comments:  A delightful, spicy bourbon with a great mouthfeel and finish that lingers long after.  Grapefruit is one of those notes I don’t get too often in whiskey (and less so in bourbon), which is a nice twist. A bit of water brings out some fruit on the nose with peaches and apricot, and thickens the mouthfeel even more with adding apricot and turning up the orange notes.
